Week 1 – Getting Started with a Boost
Aim of the week – Eat more Green Leaves!
Green leaves are packed with essential nutrients and fibre that the body needs to function well – they give us a gentle detoxification and support our emotional balance by boosting the liver…
So this week’s aim is to BOOST the amount of green leaves you are eating…
Wherever you shop let yourself be drawn in by what is green and leafy:
Kale Cabbage Rocket
Salad leaves Spinach Chard
Pak Choy Endives Watercress
Fresh herbs Lambs leaf Broccoli
Make a soup
Try out a green smoothie
Add a salad to each of your meals
This week is not about stopping doing anything… it is about adding in!
Top tip: when you buy your green leaves, wash them and spin them dry and leave them in the fridge in a teatowel… they will stay good for 4-5 days and be easily available when you need them…
Recipe(s) of the week
Green Smoothie (serves 2)
1 apple or pear
1 banana
1 fig or handful grapes or blueberries (whatever is in season)
2 glasses water
handful cashew nuts
1 dessert spoon chia seeds
Add them all to your blender and blend until smooth…
Chard soup with butterbeans
(kids will love ‘fishing’ for the beans!)
Ingredients
· Big bunch of rainbow chard
· 1 onion
· olive oil
· 1 tsp vegetable stock (optional) and water to cover
· 1 tin organic butter beans (rinsed)
Cooking notes
Quick and easy soup which is amazingly creamy (without having cream!)
Directions
· Sauté the onion in a pan in a little olive oil
· Add the chopped stems of the chard (leave the leaves until a bit later) and cover to speed up cooking
· Add the chopped chard leaves and cover with boiling water and some vegetable stock
· Cook for about 10 minutes until potatoes are soft
· Blend until smooth
· Add in butter beans and simmer for few more minutes
