What really makes you feel great? I don't mean what gives you a quick fix or is a delight for just 2 minutes.... but what really makes you feel you can climb mountains?
That's what I asked myself today before I prepared lunch. I was lucky to be working from home and having a fridge full of fresh vegetables and also some grains I cooked yesterday. So I started to pull a few things out of the fridge and followed my real desires for creating something to make me feel great!
The sun is shining. The shift is coming of wanting lightness and colour....
Of course the predominant colour is green ;-)
So I made a dressing of olive oil and lemon juice at the bottom of a big salad bowl and shredded in a LOT of raw spinach...
... and then came the colours on the top:
half an avocado, some beetroot, 4 olives, 4 cherry tomatoes, half a red pepper, a few dices of sheep's cheese, some buckwheat, some sunflower seeds and hemp seeds and plenty of black pepper....
and a good mix around...
It took 5 minutes to put it together. I wash the spinach after buying it and keep it in a tea towel in the fridge to make it all easier and quicker to put together...
A veritable bowl of energy!
And to add to the pleasure I could even take it outside to eat it on my sunny terrace today...
Even if you are working in an office - picking up a good sized tupperware for all your leaves and tasty additions is a perfect way to treat yourself to an energising lunch that will not give you an afternoon 'dip'.... take a moment to enjoy it with colleagues, or in a park...
Go on - you know you deserve it!
Here's the formula:
- lots of lots of green leaves for the energy, nutritional burst and to bulk up and add to satisfaction
- some wholegrains for long lasting energy (mine was buckwheat but could be quinoa, millet, brown rice, barley....)
- all the other bits and pieces for colour, taste and PLEASURE!
