When I was made redundant in 2011 life took quite a turn. At the time I was at home with our three month old son, our home was still full of builders finishing off a pretty massive renovation job, the nights were broken up, I was very tired and could not think much beyond changing the next nappy...
I knew that I wanted something else for my life. I did not want to be travelling any more and be away from my son, I wanted a job that felt closer to people, I wanted to work for myself and have flexibility... in September 2011 I wrote a wish list of what I really wanted to happen.
Over the next year I slowly ticked off each one of those wishes - I found a course to retrain in nutrition that allowed me to study in my own time, I had a year at home with my son, I started working part time to finish my studies and got great advice in taking steps to become independent in Brussels.... I had a very supportive partner and managed to graduate from my studies, get pregnant again and start my own career as a health coach...
Every so often I take a moment to look back and say wow!
What a complete life change.
Thank you so much for making me redundant - as jumping out of a safe job into the unknown would have been the hardest thing to do... it's that leap of faith, the dive between two trapeze bars...
But seeing how different life can be is such an amazing gift...
I love what I do, I get excited about each day with the amazing people I work with and I love sharing their journeys for a short time... I am always constantly learning from them and being inspired to keep going...
This week my life long learning has taken me to try fermenting my own vegetables.
Fermented veggies are amazing for your gut flora and (apparently) so easy to do at home. My kids both love sauerkraut too so following some advice from a fellow health coach (thanks Laurence) I started my pots yesterday!
With 30grams of salt to one litre of cold water already mixed, I chopped a white cabbage and a daikon very finely and I have 2 pots of cabbage, 1 daikon and 1 mixed.
I covered each in water and sealed them up for the magic to happen.... about 3 weeks until I will give them a try. Will let you know!
