Ingredients
Coconut oil
1 red onion, chopped
1 clove garlic (crushed)
1-2 cm fresh ginger (grated or chopped finely)
1 head of broccoli
1 dessertspoon of tamari sauce
1 can of black eyed beans or butter beans (drained)
1 handful cashew nuts
some shiitake mushrooms (chopped)
Serve with brown rice and fresh coriander (optional)
Directions
Put the brown rice on to cook as this recipe does not take long…
Saute the onion in the coconut oil
Add the garlic, ginger and broccoli and cover to soften (you can add a bit of water to let the broccoli steam)
Add the tamari sauce
When the broccoli is almost at the softness you would like to eat it (not mushy!) add in the drained beans…
… and cashew nuts
In a separate pan cook the shiitake in a bit of coconut oil
Serve with brown rice and some fresh coriander if you have some.
