Ingredients
250g flour (I use about 60% wholemeal)
pinch fleur de sel
half teaspoon ground ginger
half tsp ground cinnamon
half teaspoon nutmeg
200g organic butter (or I used 150g and the left over almond mush from making almond milk)
4 tablespoons of organic honey
4 free range organic eggs
900g mixed dried fruit (I used combination of sultanas, cranberries, figs, dates, currents)
100g mixed chopped nuts (I used almonds, hazelnuts and walnuts)
zest of one lemon
Directions
- preheat oven to 150 degrees
- sieve the flour, salt and spices into a large bowl
- melt butter and honey together and add the flour - beat together well
- add in the dried fruit and nuts and the zest of the lemon
- mix well and then put mixture in a greased cake tin
Bake in the oven for about 2 hours
A beautiful Christmas Flower!
Pack away in baking paper in a tin until time to eat it... You can decorate with marzipan (homemade recipe to follow) or icing if you like it... or just decorate with a ribbon around it and nuts or snowmen on the top!
