Courgette spaghetti with lemon, mint and feta

Ingredients

2 handfuls of fresh spinach, roughly chopped
3 courgettes made into spaghetti
juice of 1 lemon
zest of 1 lemon
handful of fresh mint leaves - chopped
100g feta cheese, chopped

 

Put the spinach in a pan and on a very low heat gently wilt (lid on is best)

Add in the courgette spaghetti - cover for another few minutes to also let it wilt and take off a bit of rawness without really cooking it

Turn off heat and add the juice of 1 lemon

Toss together and transfer into a salad bowl to top with fresh mint, feta and lemon zest

Finally a drizzle of olive oil and some black pepper and ready to serve
