Gluten free seed bread

Thanks to Deliciously Ella for the inspiration for this amazing bread recipe....

Ingredients - Makes one loaf

600ml of cold water

260g pumpkin seeds

200g brown rice flour

200g almonds

85g sunflower seeds

3 heaped tablespoons of psyllium husk powder (available from Desmecht in Brussels)

2 tablespoons of chia seeds

1 tablespoon of dried mixed herbs e.g. herbs de provence

salt and pepper to taste

Directions

Place almonds and 200g of the pumpkin seeds in a food processor and blend into a flour.

Pour the flour into a mixing bowl and add all other dry ingredients and mix well.

Add water and stir mixture well together.

Leave to one side for 1 hour.

Preheat oven to 200 degrees celcius. Put the dough onto a baking tray keeping it only about 5-7cm tall.

Bake for 45 minutes until top is golden and you can pull skewer out clean.
