Kale, spinach, chickpeas and manouri

Sometimes hard to give a name to a dish rather than just list ingredients.... this was one of those 'follow the instincts and just add to the pan' concoctions but was SO delicious I just had to share!

Ingredients - serves 2

1 red onion - chopped
1 red pepper - chopped
2 good handfuls of kale
same amount of spinach
half a jar of chickpeas
spoon of homemade pesto
Olive oil
Manouri cheese (or feta)

Directions

Start the onion off in some olive oil in a pan until softening.
Add the red pepper - cover and cook another few minutes
Add kale... cover again and let it wilt...
Add chickpeas....

Cover with spinach and again let it wilt

I like to use Manouri as an less-salty alternative to feta sometimes...

Add in a spoon of pesto and mix together.... top with Manouri and then serve...
