Ingredients
2 red onions - sliced thinly
olive oil
2 aubergines - cubed
400g jar of chickpeas (rinsed)
juice of 1 lemon
pinch of saffron
1 tsp ground turmeric
2 tsps ground cumin
handful sultanas
3 fresh tomatoes cut in wedges
fresh coriander to serve
Directions
- put onions and olive oil in a pan and let them soften on a gentle heat
- add the aubergines and cover until aubergines are also softening
- add in the spices and and lemon juice and again cover to let them be absorbed
- add chickpeas, tomatoes and sultanas and again cover until all ingredients and soft and fragrant
- serve with brown rice and sprinkle with fresh coriander
