Oat, hazelnut and sultana cookies
200g oat flour (just 200g oats ground in a blender)
50g coconut oil (this comes in solid form in a jar)
100g hazelnuts (also ground in blender - but some can remain in smallish pieces)
3-4 dessert spoons of apricot paste (apricots cooked 5 mins in some water and blended - I use hand held mixer)
handful sultanas
splash of almond milk - to allow to mould into shape
Directions
1) Put oats and hazelnuts in mixing bowl and rub in the coconut oil (like making a crumble)
2) Add all other ingredients except milk and mix together
3) Add enough milk so that you can press mixture into ball (my son and I both got messy doing this!)
4) Put on greaseproof paper on a baking tray and press flat into a cookie shape
5) Put in oven at 150 degrees for about 20-25 minutes (check!)
