Radicchio is a bitter tasting Italian type of chicory - it goes well with a strong tasting dressing and some fruit to add sweetness to the bitterness. Taste delight!
Ingredients
1-2 heads of radicchio finely shredded
1-2 pears
handful of walnuts
optional crumbled goats cheese or feta
for dressing:
2 tablespoons olive oil
1 dessert spoon balsamic vinegar
1 dessert spoon of mustard (I love this 5 plant mustard)
Make the dressing in a large bowl, add the shredded leaves and toss well until they are covered with the dressing
Add other ingredients
