This is a variation on an Ottolenghi recipe... just love his spice mixes - they really work!
Ingredients
1 tin of butter beans or cannellini beans - drained and rinsed
1 tablespoon of olive oil to fry them in
2 leeks - washed and chopped
1 clove of garlic - crushed
a large bunch of sorrel - chopped roughly
juice of half a lemon
2 teaspoons of sumac (tangy lemony spice from the Middle East)
150g feta - crumbled
mixed chopped fresh herbs - I used dill, mint and parsley
Directions
In a flat frying pan - put the beans in one layer on the bottom of the pan and drizzle with oil - let them fry until lightly browed (turn them gently so they don't end in a mush) - transfer to a bowl to cool.
In the same pan, add a little more oil and lightly cook the leeks until soft
Add the garlic and sorrel and cook until the sorrel has wilted
Add the lemon juice and sumac and stir
Transfer to the bowl and add in the crumbled feta and chopped fresh herbs
Serve just as it is, or I also boiled some new potatoes and added mint and dill and olive oil to them...
