Spinach pancakes with pesto, goats cheese and tomatoes

Ingredients

100g buckwheat flour
200 ml cold water
3 eggs
2 handfuls of fresh spinach
pinch seasalt
coconut oil for base of pan

filling suggestion (but you can put anything!)
some homemade pesto (or shop bought if needed)
fresh goats cheese
thin slices of tomato

Directions
Blend all the pancake ingredients together in a blender
 

Melt some coconut oil in a pan and add a ladle full of the mixture... I prefer to keep the pancakes small due to my first experiment described here.... but if you are a pancake expert - do as you usually do!

Wait until bubbles appear on the top of the pancake and then turn it over....

Slide onto a plate and decorate and serve.

Yours are probably a beautiful round shape!!

But they taste good anyway!
