Ingredients
1 dessert spoon coconut oil
2 onions
fresh turmeric, ginger and garlic
1 dessert spoon each of ground cumin and coriander
few chilli flakes (depending on your taste)
3 sweet potatoes, scrubbed and cubed
1 tin/carton of chopped tomatoes
bit water
1 bunch of kale, stalks removed and chopped small
1 can coconut milk
Directions
Start off onions in the coconut oil and as they start to soften add the ginger, turmeric and garlic - let them saute for a minute.
Add in the other spices and then the chopped sweet potato pieces and make sure they are well covered
Add a little water if needed and cover to cook for a couple of minutes.
Add in the chopped tomatoes (you could use fresh if you have them available). Cover and cook until sweet potatoes are soft.
Add in the kale - it looks like a lot but will reduce considerably. Stir it in.
Finally add the coconut milk and make sure all warmed through.
Serve with some wholegrain basmati rice.... yum!
