Ingredients
1.5 cups of dried quinoa - rinsed well and cooked in 3 cups of water
1 red onion (sliced thinly)
2 courgettes (diced)
1 red pepper (diced)
1 head broccoli - florets cut off
2 large fresh tomatoes
handful fresh basil
some feta cheese (diced)
Directions
Cook quinoa and leave aside to cool a bit
Saute the onion in some olive oil and then add courgette, red pepper and broccoli - cover and leave to soften.
Add chopped fresh tomatoes and half the basil and cover again for about 5 minutes.
Combine all ingredients into a salad bowl and decorate with feta and basil leaves
