Keep it simple

As you know by now one of the main themes of this blog is that preparing good food doesn't have to be complicated and doesn't have to take a long time.

This week has been a busy one with family visits and kids waking up in the night... we all know how a bit of sleep deprivation can feel... so even more reason to enjoy this season of tasty vegetables and keep it simple.

A couple of ideas

Slice the courgette thinly (great if you have a slicer to do this), layer on a plate and add olive oil, lemon juice, fresh mint leaves roughly chopped and some fresh goats cheese.... delicious!

This one took a bit longer as I grilled each slice of aubergine in a griddle pan for a minute each side. I made my own pesto with just some fresh garlic, lots of basil leaves, olive oil and parmesan (you can add pine nuts but I didn't have any!). Layer on plate and enjoy...

Then just take them outdoors or in and enjoy the weather and your company... or even a quiet meal alone... smakelijk!
