Ingredients
Selection of green vegetables, I used:
• 1 leek
• 2 courgettes
• bunch of pak choy
• some frozen peas
• left over brown rice
• cashew nut butter
• tamari sauce
Directions
Chop all the vegetables and sauté in a pan with a small amount of olive oil. Start with leeks, then add white part of pak choy, courgette and finally the green part of the pak choy and peas. Keep a lid on to speed up cooking and retain steam
Mix in the left over rice
Make a small hole in the centre and add a tablespoon of cashew nut butter and a teaspoon of tamari sauce. Mix together and then mix into the wider rice and vegetables
