Ingredients
1.5 mugs of unsalted, unroasted nuts (I used pecans and almonds but any work)
2 mugs large oats
2 mugs seeds (I used mix of pumpkin, sunflower and linseeds)
3 tablespoons coconut oil
2 tablespoons of maple syrup or honey
1 mug sultanas or cranberries or chopped dates or apricots
bit of spice if you like - some vanilla or ginger or cinnamon
Directions
As you can tell this is a super versatile granola recipe that you can adapt to your personal tastes.... this is the general method
Heat oven to 180 degrees centigrade
Chop nuts in food processor a bit - just partially crushed. Put in mixing bowl and add all the seeds.
Melt the coconut oil and honey/maple syrup together in a pan over a very low heat and add your choice of spice.
Add this to the nuts and seeds and mix in well. Place on a baking sheet and bake in the oven for 30-40 mins turning it over regularly to check it is not burning.
When it is nicely toasted take it out and mix in dried fruit. Store in an airtight container and will keep for weeks.
Serve with fruit or greek yoghurt or almond milk or whatever takes your fancy!
