Ingredients
1 cup of quinoa cooked in 2 cups of water
Fresh peas from the pod - as many as you have!!
olive oil
lemon juice
basil or mint leaves
feta
hemp seeds
Directions
Cook the quinoa and the peas. Mix together and add plenty of olive oil and juice of 1 lemon.
Put in a salad bowl and add all other ingredients - mix and serve
We had on a bed of roquette and topped with some avocado dip (avocado, lemon juice, salt and pepper).... delicious
